PALE ALE/BITTER RECIPES


Adnams Southwold Bitter  - 1043  

  

1lb 14 oz Pale Malt: 1 oz Crystal Malt; ½ oz Roast Barley
  Boil 90 mins: ½ oz Fuggles, ¼ oz Goldings.    

 ¼ oz Goldings for 15 minutes at end of boil.

Vital Statistics: OG: 1.056 – 1.075

IBUs: 40 – 70 FG: 1.010 – 1.018

SRM: 6 – 15 ABV: 5.5 – 7.5%

COMMENT:  This looks seriously hoppy!  You might want to tone it down a bit

   12 lbs - Pale Malt, Maris Otter (3.0 SRM) (Grain)

   2 lbs - Vienna Malt (Weyermann) (3.0 SRM) (Grain)

   8.0 oz - Cara-Pils/Dextrine (2.0 SRM) (Grain)

   8.0 oz - Caramel/Crystal Malt - 20L (20.0 SRM) (Grain)

   1.0 oz - Citra [11.0%] - Boil 60 min (Hops)

   0.5 oz - Citra [11.0%] - Boil 45 min (Hops)

   0.5 oz - Citra [11.0%] - Boil 30 min (Hops)

   0.5 oz - Citra [11.0%] - Boil 15 min (Hops)

   1.00 - Whirlfloc Tablet (Boil 10 min) (Misc)

American Hopped Ale - National recipe

To make 10 litres; O.G. 1040

Ingredients

1.6 kilo pale malt; 130 gms torrified wheat; 60 gms crystal malt

24 gms Cascade hops in boil (to approximately 35 IBU)

14 gms Cascade hops, (post boil) or other American hops.

Irish moss (add in last 15 minutes of boil)         Safale 04 yeast

Method

Mash for 1 ½ hour, sparge & boil for 1 hour, add the remaining hops after the boil and leave to soak for 30 minutes.

Cool the wort, and make up to 10 litres with cold boiled water, ferment to approximately SG 1010. Rack into primed beer bottles, and store for 1 month before sampling.


Chelmsford Bitter 1861 (1056) - Durden Park


2.6 lb Pale Malt, 1.6 oz Fuggles.  Keep 4-5 months.


Exmoor Gold (B&H recipe 2018) (OG 1045 – ABV 4.7)


Ingredients to make 1 gallon

Pale Malt 910gm

Main boil Challenger hops 10 gm; Fuggles hops 4gm

Late add Fuggles hops 2gm; Goldings hops. 2gm; Irish Moss 5gm

Mash at 66C for 90 minutes

Boil for 90 minutes
